Mouthwatering Vegan Tacos
The key to any good vegan taco recipe is spicing up your taco "meat" and using fresh, colourful ingredients!
Here's what you'll need....
4-5 cups of cremini mushrooms, chopped
1 package of veggie ground round (ground beef replacement)
2-3 plum tomatoes, diced
1/2 red onion, finely diced
1 lime, juiced
1/4 cup cilantro, finely chopped
1 avocado, cut into 0.5" pieces
Half a head of lettuce, chopped into small strips
Half of a diced jalapeno, diced + seeded (optional)
12 hard/soft taco shells
1-2 TBSP chili powder
1-2 TBSP cumin
1-2 tsp chili flakes
1-2 TBSP maple syrup
s&p
vegan cheddar cheese shreds, optional
Louisiana hot sauce, garnish
cilantro, garnish

Directions:
1. Preheat oven to 325F. On your stove top, place chopped cremini mushrooms into a non-stick pan over medium heat. Add half of the spices (chili powder, cumin, chili flakes) and 1 TBSP of maple syrup. Stir well. Allow mushrooms to cook for about 5 minutes. (If mushrooms stick to pan, add a little bit of water). Continue to stir.
2. Next, add the full package of veggie ground round in with the mushrooms. Break up the ground round with a wooden spoon and mix everything together. Add the other half of the spices (chili powder, cumin, chili flakes) and remainder of the maple syrup. Mix well. Once the ground round warms up, turn down to low heat and keep stirring, occasionally.
3. Meanwhile, in a small bowl, mix the tomatoes, red onion, cilantro, lime juice and s&p to taste. This is your pico de gallo! :-D (You can add in some diced jalapeno if you like it spicy!!)
4. Pop your hard taco shells into the oven for about 5 minutes. When they're baked to your desired crispiness, take them out and load them up!
This is how I layered my tacos....
layer 1: mushroom/ground round mix
layer 2: shredded vegan cheddar cheese (optional) (This way the "meat" mix melts the cheese!! mmmmmmm ;)
layer 3: pico de gallo
layer 4: chopped lettuce
layer 5: avocado
layer 6: cilantro and hot sauce
Serves 2-4 people. Just depends on how many tacos you can eat! I made this recipe for my husband and I and most of it was gone! I would definitely double it if you're making it for a group.
