Leafy Rad Pizza

This recipe is SO simple and quick – you only need 4 ingredients! Delicious and light. Perfect for summer!

Ingredients

Package of 6 pitas

1 large head of raddichhio

Sea Salt

Olive Oil (2-3 TBSP)

Directions:

Preheat oven to Broil. Lightly dust pitas with olive and place on a baking sheet (I made 2 at a time. Just depends on the size of your baking sheet). Place sheet on top rack of oven for about 2-3 minutes. Or until lightly browned.

Meanwhile chop the raddichhio into ribbon size strips. Place in a bowl. Add about 2 tbsp of olive oil and 1-2 tsp of sea salt. Mix well.

Pour raddichhio mix on top of pitas and place back in oven (on broil) for 2-5 minutes keeping a close eye on them. When the raddichhio is slightly wilted, pitas are ready to serve!
