Vegan Lentil Burgers
1 can of lentils
1.5 cups of brown rice (cooked)
1/4 cup of flour ( I used whole wheat)
3 grated carrots
1 small diced red onion
2 cloves of garlic (finely chopped or pressed)
Fresh cilantro chopped (about half a head)
1 tsp of crushed red pepper flakes (add more if you like it spicy!)
salt
pepper
1-2 fresh tomatoes
Mix all of the ingredients in a large bowl until you have a fairly consistent mixture. Mead the mixture into about 6 burger-size patties. Heat a large skillet with 1 tsp of olive oil. Pan-fry each patty for about 2-3 minutes on each side or until golden brown. Add sliced tomato. Makes about 6 patties.
