Delicious low sodium & low fat tomato sauce!
This sauce is inspired by my Nana’s recipe but I’ve substituted and added a few ingredients….sssssshhhh
1-2 tbsp of extra virgin olive oil
1 medium-sized yellow onion
2 cloves of garlic (This is one of the ingredients I added – I don’t think my Nana has ever cooked with garlic…she’s Italian so definitely an anomaly!)
I can of Unico NO SALT ADDED whole tomatoes (this ingredient is essential – only 15mg of sodium per 1/2 a cup – SIGNIFICANTLY less sodium than most canned tomatoes).
1 diced organic red pepper
1 cup of organic sliced cremini mushrooms
1 tbsp of dry oregano leaves
1 tsp of salt (sea salt or grey salt…stay the hell away from table salt!)
fresh ground black pepper to taste
1/4 cup of raw organic coconut sugar (To sweeten up the sauce like my Nana’s without the white sugar).
If you want to add a bit of a kick to the sauce you can dice up a red bird’s eye chili and throw it in with the rest of the veggies. Alternatively, you can add a bit of cayenne.
Simmer on low for at least 20 minutes.
Serve with your favourite whole wheat or rice pasta!
