Creamy Carrot Ginger Soup
Ingredients:
1 medium-sized yellow onion, diced
2 cloves of garlic, minced
4 cups of carrots, chopped
2 cups of celery, chopped
6 cups of vegetable broth (low sodium)
1/4 cup of fresh ginger, chopped
1 can of coconut milk
s&p to taste
Directions:
In a large pot, saute the onion until soft. Next add the garlic, ginger, carrots and celery and a few dashes of salt and pepper. Stir vigorously for about 3-5 minutes. Add the vegetable broth and bring to a boil. Simmer on low for about 30 minutes. Allow to cool for 5-10 minutes. Add the coconut milk. Puree in a large blender. Add s&p to taste. Serve and enjoy!!
