Oatmeal Carrot Cookies

Bowl #1: 1 cup of quick oats + 3/4 cup of flour + 1.5 tsp baking powder + 3 tsp of cinnamon + 1 tsp of ground cloves + 1/2 tsp of salt + 1 tbsp of coconut sugar.

Bowl #2: 4-5 tbsp of soaked chia seeds (I added water to a bowl of chia seeds and let them soak for about an hour) + 1/2 cup of maple syrup.

Bowl #3: 1 cup of grated carrots.

Directions: Mix bowl #3 and bowl #2 in bowl #1! Roll large patties. Bake on a baking sheet with parchment paper at 325 for 15 minutes.

This recipe is inspired by my beautiful friend, Julie-Anne. We ate these all weekend at the Victoria Yoga Conference last year!
